I’ve recently been diving into the world of plant-based cooking and I’m on the hunt for a truly inspiring vegetarian cook book. There are so many out there, but I’m looking for something that’s both beginner-friendly and creative—recipes that go beyond just salads and basic stir-fries.
What I really want is a cookbook that makes vegetables the star of the plate, with exciting flavors from around the world. Bonus points if it includes prep tips, nutritional info, and ideas for meal planning. I recently came across Vibrant Veggie Delights by Michael Feeney, and it’s been a great start—his global approach to vegetarian meals is refreshing and flavorful without being overly complex.
I’d love to know what vegetarian cookbooks have inspired you. Do you have a go-to for weeknight dinners? Any hidden gems that totally changed how you see plant-based eating? Whether it’s for health reasons, environmental concerns, or just the love of veggies, I think we can all benefit from adding more meatless meals to our routines.
